Crispy seasoned pan-fried chicken thighs served in a rich, velvety coconut milk and Japanese curry sauce over hot rice in 30 minutes.

Place the chicken thighs in a bowl and season with paprika, garlic powder, turmeric, curry powder, salt, black pepper, and a drizzle of olive oil. Massage well until thoroughly coated.

Heat a skillet over medium heat and pan-fry the chicken for 7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside to rest.

In the same pan with the remaining pan drippings, add the chopped onion and minced garlic. Sauté for 2 to 3 minutes until fragrant and softened.

Pour in the coconut milk and add the Japanese curry cubes. Stir well to dissolve the cubes and simmer for about 2 minutes until the curry thickens.

Slice the rested chicken thighs.

Add a scoop of hot cooked rice into the pan with the curry sauce, arrange the sliced chicken on the side, and garnish with chopped green onions and black sesame seeds before serving.
