A comforting British apple and banana crumble featuring chewy flapjack pieces throughout the filling and topping, served with vanilla custard.

Melt a knob of butter in a pan over medium heat. Add the diced cooking apples and diced Pink Lady apple.

Add brown sugar, a squeeze of fresh lemon juice, vanilla extract, and spices. Gently fry everything together for around 8 minutes until softened.

Pour in a small cornflour slurry to bring the juices together, stir well, then transfer the cooked apple mixture into a baking dish.

Scatter crumbled flapjack over the apples into the gaps, then top with a layer of diced ripe banana.

Make the crumble by combining flour, rolled oats, brown sugar, crumbled flapjack, spices, and a pinch of flaky salt in a bowl or wide dish. Add the cold diced butter.

Rub the butter into the dry ingredients using your fingers until you achieve a rough crumble texture with a mix of fine crumbs and large clusters.

Evenly distribute the crumble mixture over the apple and banana base in the baking dish.
