Lebanese-style sujuk shawarma wraps made with seasoned ground beef rolled thin, baked, and assembled in pita with toum, wild cucumber pickles, and sliced tomatoes.

Preheat the oven to 415°F (212°C).

In a large mixing bowl, combine the ground beef, grated garlic, hot pepper paste, white vinegar, paprika, garlic powder, black pepper, coriander, allspice, fenugreek, cloves, cumin, cardamom, and sazón seasoning. Mix thoroughly until well combined (wearing gloves is recommended).

Lay down a sheet of parchment paper. Place about 1/4 lb of the meat mixture onto the bottom third, cover with a second sheet of parchment paper, and roll it out with a rolling pin into a very thin, even layer. Repeat with the remaining meat.

Roll or fold the parchment sheets with the meat and place them onto a baking sheet.

Bake in the preheated oven at 415°F for about 10 minutes until cooked through.

Carefully peel open the parchment and tear or cut the cooked meat sheets into thin strips to mimic shaved shawarma meat.

To assemble, open a pita and lay it flat with the smooth side down. Spread a generous layer of garlic toum across the bread. Add sliced pickles, sliced tomatoes, and a generous portion of the cooked sujuk meat.

Roll the pita up tightly into a wrap.

Place the wrap seam-side down onto a hot flat-top or dry skillet to toast until crispy and sealed. Serve immediately with extra toum.
