An easy slow cooker beef recipe featuring fall-apart tender stew meat tossed in a sweet, savory, and glossy sesame-ginger sauce.

Add the beef stew meat to the slow cooker.

Pour the soy sauce, brown sugar, beef broth, sesame oil, minced garlic, grated ginger, rice vinegar, and red pepper flakes over the beef.

Cover and cook on low for 8–9 hours or on high for 4–5 hours, until the beef is fall-apart tender.

Ladle out ¼ to ⅓ cup of the hot cooking liquid into a small bowl and whisk in the cornstarch until completely smooth.

Pour the slurry back into the slow cooker, stir gently, cover, and cook on high for another 20–30 minutes until the sauce is glossy and slightly thickened.

Serve hot over jasmine rice, garnished with sliced green onions, sesame seeds, and your choice of green vegetable.
