    In a bowl, combine the yeast, sugar, and milk, and whisk together.

    Add the flour and stir until fully combined.

    Add the salt and 60g softened butter. Stretch and fold (or coil fold) the dough repeatedly until the butter is fully incorporated and smooth.

    Cover bowl and let the dough rise for about 2 hours, or until doubled in size.

    Turn dough onto a floured surface and stretch/roll into a large rectangle.

    Spread 140g softened butter evenly over the dough surface, then sprinkle generously with the mixed brown sugar and ground cinnamon.

    Cut the dough into 6 equal long strips and roll each strip up tightly into a cinnamon roll.

    Sprinkle a little cinnamon sugar mixture into the bottom of a parchment-lined baking pan, then place the rolls inside.

    Cover and let rest for 15 minutes.

    Mix 1 tbsp melted butter with a splash of milk, then spoon about 2 tbsp of the mixture over top of each cinnamon roll.

    Bake at 350°F (175°C) for 25–30 minutes, or until golden brown.

    Upon removing from the oven, immediately cover with a clean kitchen towel until warm.

    Whip 85g softened butter, 180g powdered sugar, and 1 tbsp vanilla extract together to form the frosting. Spread generously over warm cinnamon rolls.
