    Set up a breading station with three shallow dishes: add flour to the first; beat 1 egg with salt and pepper in the second; combine panko, salt, black pepper, paprika, garlic powder, a handful of grated Parmesan, and a pinch of lemon zest in the third.

    Season the chicken cutlets with salt and pepper, place between parchment paper, and pound to an even, thin thickness.

    Dredge each cutlet in flour (shaking off excess), dip in beaten egg, then press firmly into the seasoned panko until completely coated.
