Finely chop the sun-dried tomatoes, onion, carrots, and mince the garlic. Set aside.

In a large pot or Dutch oven over medium heat, brown the Italian sausage, breaking it apart with a spoon until cooked through. Remove the sausage from the pot and set aside.

Add the butter to the same pot. Sauté the chopped onion, carrots, and minced garlic together until softened.

Sprinkle in the flour and stir well to coat the vegetables and cook off the raw flour taste.

Gradually pour in the chicken broth a little at a time, followed by the heavy cream, stirring continuously to incorporate.

Season the sauce with salt, Italian seasoning, garlic powder, and red pepper flakes.

Once the sauce reaches a simmer, add the gnocchi. Let simmer for 5 to 7 minutes until tender, adding additional broth or heavy cream if needed to adjust thickness.

Add the chopped sun-dried tomatoes, grated parmesan cheese, cooked sausage, and fresh spinach. Stir well until the cheese is melted and the spinach is wilted.
